Cold Draw: Red pepper, simple syrup.

Tasting Notes: The first third is red pepper, cedar, charred woods, rosemary, ginger, and tamarind. Creamy smoke, ginger retro, and slight lemon on the finish. Further in: tamarind, leather, oak, charcoal, and cinnamon sticks. Really sweet smoke with a birch beer note. If you slowly retrohale, the flavors are deeper and more nuanced.

The second third is orange cream, ginger, red pepper, horseradish, cedar; true Nicaraguan Habano. The retro is white pepper now and woody. It’s also got hints of fried foods and I’m being serious! Lemon lime soda? What?

The final third presents white pepper, charred oak, lime zing, vanilla, cream, and a slight ginger.

Pairing Notes: Fried chicken, pilsner and Bavarian beers, bourbon, lemon pepper chicken, lime club soda, birch beer, cinnamon cappuccino, chicken and waffles with syrup, Creamsicle.
